This isn’t a recipe for cream of broccoli soup. This is a recipe for broccoli soup. It’s actually quite a bit better, and easier to put together.
Of course, he’s probably not the creator of this recipe, but I was introduced to this recipe during an episode of Gordon Ramsay’s UK show Kitchen Nightmares.
Broccoli Soup Ingredients
Broccoli. Just broccoli and water. And some salt.
How to Cook Broccoli Soup
Chop off the good bits from either one large broccoli head or two medium ones.
Bring a pot of water to a boil and toss in your broccoli and about a tablespoon of salt.
Continue boiling the broccoli until you can push into it with a fork with little to no effort.
Remove the broccoli from the water with a large spoon and place into a blender. It’s important to remove the broccoli with a spoon instead of straining it because you’re using the water.
Once all the broccoli is in the blender, fill the blender half way with some of the water you just boiled the broccoli in. Add a pinch of salt, as well.
Now blend it all together.
What you end up with is a thick green soup that actually tastes like broccoli.
Tips for Making Broccoli Soup
- If you make some homemade bread and toast it or make it into garlic bread you can make it a whole meal.
- You can add some cheese. Cheddar is fine, but goat cheese is great.
- Garnish with black pepper or broccoli florets.
